Hey, have you cut the bottom block of the Tree and its still floating? What the hell? That's what people who haven't yet tried Minecraft will say. This is what I think on Realism in Minecraft.
Trees
Trees are one feature of no Realism, they can float. In real life you cut down a tree and it falls (AND PROBABLY HITS SOMEONE :P) But in Minecraft it doesn't fall... it floats (NO HIT IN THE HEAD ;'( ME SAD)
So I think that this is one feature they could possible add to 2.0 (Not 1.8 or 1.9)
As they can slowly fall to the ground and you can chop from there.
Animals
Animals are not as realistic as their Real Counterparts, one thing how come only Horses and Sheep get to eat grass? Pigs and Cows eat grass too not just Horses and Sheep. Do Horses go "" and when they die they make a noise? No they "Neigh" first. They said that they will add sounds. Hopefully in 1.8. Last thing... Sheep and Horses are Meatless, they are undead. (What? Then explain why they can't be dead?) They need to drop meat.

Trees: Well It wouldn't really work and would take away the "minecraftish" feeling.
Mobs: If for example sheep dropped meat... Then could you just simply only have a big sheep farm and you get both food and wool, then you can screw pigs.
What I think should be more realistic tho is the armor and weapons.
Swords and bows: should deal quite much more damage.
Bows: should deal 2x damage at head, 1x damage at body and 0.5x damage at arms and legs and shots at legs would cripple and give slow.
Armor: Should grant more defense (as I said increase the damage will need improved armors making it less good to be without). Armors are heavy, and would grant a slow, Leather and chain are quite light and wouldn't affect movement very much (also add crafting for chain) and gold, iron and diamond armor are heavy and would cause slower movement and strikes. Shields wont protect from anything and will only protect you from strikes from the frontside and arrows hit dirrectly on the shield, the shields would not protect 100% of the damage received but like Leather:60%, Gold:70% Iron:80% Diamond:90% and you should only be like able to shield a certain ammount of strikes before you have to rest for a short while.
Horses: When riding horses your movementspeed wont get slowed down by players armors but it will get
slowed down by horse armor.
*Shields: Would be added and make blocking with swords less useful against arrows. there should be leather wood shields that is quite light and then iron,gold and diamond that is heavy and also causes slower movement in combat.
*Lances: It would be cool but seems quite impossible to make... But would be cool to have when mounted on horse.
