Loot Table Overhaul/Improvements!
Most loot tables in the game have been fixed/improved/altered/balanced!
Most loot tables also now properly use the quality tag and as such are affected by the luck/bad luck effects!
All of the following changes were carefully tested to make sure they are as balanced as possible.

Farming Improvements
-Crops can be collected more efficiently with a hoe: Wheat has a chance of dropping TWO wheat if harvested with a hoe, and beetroots now drop multiple like carrots/potatoes. Melons and cocoa beans can be collected as normal without a hoe.
-Nether warts will drop 1-2 wart (regardless of fortune) if not harvested in the nether.
-Apples only drop (in ascending order of drop chance) in plains, sunflower plains, forests, and flower forests. Until apple trees are added, this biome check is the next best option.
-Seeds from grass are now MUCH rarer and will be very difficult to find early game without fortune. This both makes it feel much more rewarding to finally find seeds to start a farm, while also cutting down on the random seeds everyone always seems to accidently pick up late game when you dont need them.
Biome Dependent Fishing/Crates
Massive overhaul to Fishing's loot table including drops specific to certain biomes and better treasure/junk items, but the main change is that you will get fish way more often even with (and especially without) luck of the sea. I believe this is the way it should be; Bonus items should be a very rare oddity, not expected or relied upon. With luck of the sea 4+, you can catch two items at once!
-You are more likely to fish junk items in deserts and rivers
-You are more likely to fish treasure items on mushroom islands
-It is possible for your line to "snap" and not get anything at all (though the chance decreases with higher luck of the sea)!
-The nether has separate fishing drops if you can somehow manage to fish there.
Massive overhaul to Piglin trading. They can now drop many new items such as nether fungi, and VERY rarely, a map to either a fortress or a bastion, a netherite scrap, or a pigstep disc (technically providing a renewable way of obtaining them). They can also "accidentally" drop more gold ingots.
Ores: Fortune now affects chance of drops not the number of drops directly (for example, though possible, it is more likely to get an average yield instead of the true maximums listed below).
-Copper drops 1-4 by default and can drop up to 9 (a full block!) with fortune 3.
-Coal drops 1-2 by default (even without fortune) and is guaranteed to drop at least 2 (with a max of 5) with fortune 3
-Iron/Gold drops at least 2 (with a max of 4) with fortune 3
*Chances of higher raw gold drops is slightly lower than iron, but so slight you likely wont even notice.
-Diamonds can only drop up to a max of 3 (even with fortune 3)
-Redstone/Lapis drops 1-3 by default and is guaranteed to drop at least 2 (with a max of 7) with fortune 3
-Nether Gold drops 1-3 by default and is guaranteed to drop at least 3 (with a max of 8, making it still better to smelt) with fortune 3
Budding amethyst can be collected and relocated using silk touch 2.
Dyes can be collected directly by breaking flowers with a sword.
Riptide, Loyalty, and channeling can be specifically and more easily obtained from ocean ruins and fishing.
Also, to clarify, the images show only the types of loot possible, and is in no way meant to represent actual loot chests.

The intent was to build on Minecraft's lore by including relevant yet useful items.
Ancient Cities Even higher chance of Enchanted Golden Apples than vanilla! Also has separate loot tables for: skulk blocks, ores (amethyst/echo shards, netherite scrap, disc fragment, and added diamonds), gear (extremely enchanted leggings/hoes, Ebook with mining enchants), and the main table with random things like eggs (for even more distraction), spectral arrows, carved pumpkins (for snow golems), gray wool, plus the vanilla loot of name tags, books, bones, and candles. The ice box now has separate tables for ice and food, meaning you will more consistently get both, plus raw meats.
End Cities (purpur, popped chorus fruits, amethyst, thing banner pattern, carved pumpkins, beetroot/seeds, an end city explorer map, eye of enders, and a new curse enchantment...)
Nether Fortresses (Nether bricks, ender pearls, fungis, and RARELY pigstep/netherite scrap just to provide an alternate method of obtaining. No more horse armor since horses don't exist in the nether. I left saddles though, for striders)
Mineshafts (unstable tnt, raw ores, pickaxes, torches, food etc)
Mansions (more/better loot including armor/weapons, emerald blocks, totems)
Desert temples now have three separate rolls: One for treasure items (diamonds/Ebooks/Gapples etc), one for mob drops (spider eyes, rotten flesh, string), and one for the honey items (bottles/honeycomb, as well as petrified slabs!).
Jungle temples (Better traps, tipped arrows, zombie heads)
Igloos (blaze powder, meaning it is obtainable without going to the nether)
Strongholds (warped foliage, more ender pearls, end stone, chorus fruits, and tools/weapons)
Dungeons (skeleton heads/misc, mining enchants)
Pillager Outposts (A map to a mansion, crossbow enchants)
Underwater Ruins (trident enchants)
Villages:
-Cartographer chests (a village explorer map, more maps/paper, with a small chance of a lodestone)
-Fisherman chests (more fish)
-Village plains house (tall grass, more food)
-Tannery (more leather, leather armor, and tons of dyes)
-Forge (guaranteed iron tool/armor, in addition to regular loot)
Each music disc is now exclusive to some random loot table. In order to collect them all you will need to search throughout the game, since you can no longer get all of them from creepers. Same with banner patterns. If you're too lazy for the challenge there is a cheat sheet in data/minecraft/loot_tables.
*NOTE: The end city loot table has a new exclusive enchantment. If you do not want this, there is an alternate loot table called "end_city_treasure2" that does not have it. To enable, simply delete or remove the regular end city treasure table, then remove the 2.

Warden now drops a few echo shards
Husks (beetroot/seeds instead of carrots/potatoes, gold instead of iron, sand)
Villagers/Zombified villagers now drop emeralds and profession specific items
Elder guardians now always drop a heart of the sea
Creepers now always drop at least one gunpowder
Player heads are now dropped by players killed by charged creepers. The Ender Dragon will also drop a dragon head if killed by a charged creeper but good luck arranging that.
Skeletons now drop their skulls like (but much more frequently than) wither skeletons
Glow squids have a chance to drop regular ink sacs making them not completely useless
Enderman now only drop up to one ender pearl based on a chance (like wither skeleton skulls)
Evokers now only drop totems when in mansions meaning you can no longer farm totems from raids. However, these totems will also include various stat boosts when in your offhand! Evokers are still worth hunting down though as they will now always drop a very good enchanted book
Zombie/skeleton horses will drop a large amount of rotten flesh/bones respectively
Ravagers will now drop tons of leather
Piglins now have a very rare chance to drop a map to a fortress if you're having trouble finding one
Piglin Brutes will always drop pigstep if killed by a ghast, and also have a very rare chance to drop a map to a bastion
Wither Skeletons have a very small chance to drop a wither rose (only 1/3 of the chance to get a skull), just to make them obtainable in a way other than the wither
Fletchers can drop luck arrows again as a hero of the village gift
Blazes have a limit of 12 rods even if killed with a very high level of looting
Spiders yield slightly less string on average than cave spiders
Meat dropped by animals will no longer be somehow cooked if they were on fire when they died. Fire aspect is for additional damage, not magically cooking meat.

Removed the changes to diorite, andesite, and granite based on used feedback. You will now be able to get them as normal without silk touch
