Why do I feel Deja Vu?

I think we need more weird stories being written. Why should we bother making the nonsensical make sense?

Character Idea that I'm sure has been done before:
This probably works best in a show or series, but a character that we grow familiar with and care for, with some event or mishap occurring and causing this character to become a quite literally different person. Same body, skin, and voice, but different person that the audience has to learn to appreciate or hate. This change won't be reversible. It's pretty much two different characters, but the audience and other characters must adapt to the shift from one to the other, and that the previous one is pretty much dead for them and unretrievable, possibly also leaning into a identity-crisis for this character post-shift.

Pretty much Ice King from Adventure Time, but instead we know Simon Petriekov from the beginning and have to watch the change, whether instant or gradual.

I am not a fan-fiction reader or writer, and though I for the longest time thought it was nothing but shipping-fantasy and self-insert nonsense, I've actually grown to respect its power from a distance. I'm about to go on another tangent about something I have zero experience with, and am more just describing my distant impression of fan-fiction's capabilities and feelings about it.
Fionna and Cake I think highlights what I've grown to realize about it best. There's something thrilling about the possibilities of seeing stories you're already familiar with be twisted and molded in new and creative ways, often going down the path you least expect. And one thing about these that really sticks out to me is really how dark fan-fiction often is. There's that uncanniness of seeing another way something could've gone, and seeing how horrible things could've been for the characters. The protagonist could be dead or corrupted, the comic-relief could now be serious, and one random relationship could've sprung up out of nowhere but somehow makes sense given the circumstances; its like having a dream about the characters, but everything's been rearranged in a way that, alien it may be, still somehow makes sense. And there's usually this sense of permanence that I've noticed with some of these situations, like that things can't and won't go back to how they once were as with the original story, and it's oddly thrilling. It reminds me of the darkest hour of the Never-Ending Story, except instead of it being just part of the climax, that feeling lingers throughout the entirety of the story.

I'm guessing this is just a specific side of fan-fiction that just happens to be the one I've been exposed to.
I invite the fan-fiction writers and readers of PMC to tell me more, as I understand I might be spouting actual nonsense and don't know what I'm talking about.
