There is a little drop down menu, on PC, that allows you to do the mob skins.

When in the editor, click File, then "New Skin". From there a box appears, you'll see the name "Steve" appear as first selection, click there and a drop menu appears. Giving you a list of all the mobs. I hope this helped! Let me know if you need further help, then I will do screenshots and upload for better help! ♥
