Here is my bamboo farm made from the tutorial from ShulkerCraft on YouTube. This produces so much bamboo it filled 3 full double chests within 1-2 hours. But it uses a pretty basic observer ignition to the most basic flying machine which uses slime blocks to break all the bamboo. There are 20 minecarts beneath the bamboo stalks to continuously collect the bamboo and all the items are collected into droppers.

This design has the option for a manual start or automatic and the option of automatic return or manual return. The only thing I did differently from ShulkerCraft's design and mine is adding more observers to speed up the rate of the flying machine breaking the bamboo. I believe he has 2 observers and I have 4 and this just increases the chance that a bamboo will set off the observers which then powers the redstone lamp which then sends the flying machine off and running.
