My favorites are:
1) The ability to trade with villagers using emeralds.
2) The pyramids which act as an extra dungeon. now they are also in jungles.
3) The ability to write in books so that you can have stories. You should be able to place them in book shelves and take them out to read.
4) The new enchanting system sounds awesome.
5) Tripwires make redstone circuits and traps easier.
