Here is a growing list of things I come up with as I play Minecraft:
Sheep: Drop lamb meat, can get a sheep head by dropping an anvil on top of it's head
All mobs: Can get heads by killing with an anvil
Whale, dolphin, etc. I want more sea animals!
Emerald armor for the REALLY rich. Show off on servers with your emerald armor, none of that old boring diamond stuff.
Emerald Tools
Hybrid Tools:
Golden Stick: Increases speed, decreases lifetime of a tool.
Blaze Rod: Use in place of a stick on a sword. Automatically gives it Fire Aspect.
Diamond Stick: Increases durability and Speed
Cobble stick: Increases durability
Emerald Stick: Used like(and woks as well as) a Diamond sword, only cooler.
MOD SUPPORT!!!!!! IN-GAME MOD MAKER!!!!!
Nether Torches: Work better than glow stone.
Redstone Lamp changes brightness with the power of the redsignal.
slimes can swim
Boats don't break when they hit a chicken / any other mob
bosses
more generations (castle, city, house, mill, etc)
more plants (blue flower, small cactus, tall tall grass, etc)
More Biomes (savanna, volcanic, epic mountains, extreme, etc)
Dieable Ender Chest for better storing space.
