Simple /trigger separate command.
Have a separable item in the main hand and do /trigger separate.
That's all.
You can uninstall the score objectives with /function separator:uninstall
List of separable items:
-Chest Minecart
-Hopper Minecart
-Furnace Minecart
-Tnt Minecart
-Every Chest boat

However my knowledge on datapacks is very limited for now, so I went with the easiest method.
I'll work on the grindstone version and publish it separately in the future.
And to do the seperation you could use:
execute at @e[type=item,nbt={Item:{id:"minecraft:ITEM_HERE",Count:1b}}] if block ~ ~-1 ~ grindstone run
Replace the ITEM_HERE with the item to separate and after the run you can do a function a seperate it with it (for that you need to add a at @s in the command above)
