You had a very interesting idea, and I think given more time, it could become a great datapack.
But, as Kefaku mentioned, there are several bugs with the pack, to the point which it's unplayable without changing the code.
And, overall it could definitely do with some more features. You could add another use for beans, beyond growing them into beanstalks. Maybe some kind of custom block only obtainable by growing them, because at the moment, it's just moss and vines.
If you really wanted to take it far, you could add a custom dimension which you can reach by climbing the beanstalk, with all sorts of treasures and dangers.
I think it definitely has potential, but needs a bit more work for it to get there.
I really like your idea, it's very creative and definitely not something I expected in this Jam, but I noticed a few problems.
First of all, you give the bean with the following command:
give virgilhd minecraft:bat_spawn_egg{CustomModelData:1,display:{Name:"{\"text\":\"Strange bean\",\"color\":\"dark_green\",\"}italic\":false}"},EntityTag:{id:"minecraft:bat",Tags:["bean"]}}
Your name is included in that command, so it only works for you and not for any other player. You must use a selector instead of "virgilhd".
Secondly, you should've used structure void, instead of air in your structure, because currently the terrain around the beanstalk get's replaced by air and subsequently looks really weird:
Also, you grant advancements to @a, I'd prefer only the player who actually did something getting the advancement.
Your datapack overall has a great idea, but with these small improvements it would be even cooler and look more polished.
Also, maybe as a future suggestion: It would be even more interesting, if the beanstalk didn't look the same every time. It would be really awesome, if you found a way to randomly generate a beanstalk, or at least had a few variants of it to randomly select from.
