Nameless v1.0
Naming a named entity - "nameless" or "Nameless" will remove that entity's name, reverting it back to normal. (Removes persistency).
Naming an entity "p_nameless" or "p_Nameless" will remove the name and KEEP the mob's persistency tag, preventing it from despawning.
This can be a useful tool for people who don't like a name they've given a mob, or want to remove a name for other reasons.
Make sure to read the README.txt file fully.

I'm thinking it's best to remove persistence since it is supposed to be being "reverted" back to normal.
The floating name tag can be distracting in a decorative scene.
Perhaps there's a way to do a "_nameless" tag as well. Your original tags revert, whilst the "_nameless" removes nametag, but places persistent tag.
Although, I was just talking to my wife about it, and if the player wanted the mob to despawn, they probably would kill it rather than spending another nametag on it.
I like how you have it, but it makes sense to revert, too. This data pack is your baby, you gotta decide how you want it to grow up. :)
