Thats an mcmeta issue, not a zipping issue.
zipping just compresses files/stuffs all folders and files into a thinner container, it doesnt change anything inside them nor its related folders

I can find it, but when I get the folder then edit it and convert it into zip, it doesn't show up on the Minecraft resource packs thingy in game.

That's probably a mistake you made in your resource pack. Maybe your pack.mcmeta is wrong or there's an invalid file name.

I was gonna suggest the same thing. But i think i know why 7 Zip is broke so to zip it up you have to open the folder and select the files inside the folder to zip instead of selecting the folder itself.
