Watercooling with an AIO is simple, you just attach it, mount it, and walk away. You won't have any problems with it.

They are a little over your £1200 budget but will max out just about any game you play, gives you overclocking ability, it is a black and blue color scheme, provides plenty of storage and an SSD, and even gives you the option to add a second graphics card in the future if you want.

Should get a better SDD.
Should get a better motherboard.
Why a 780? A r290 is much cheaper with similar/better performance.
PSU is overkill for one GPU but not enough for sli 780s.
What monitors are you reusing OP? Are you gaming on a 1440p monitor with 1080p monitors on the side?

Changes I would make: Use a case from Corsair at this budget, like the 760T and swap out the graphics card for a 290 or 290x. The 290 will perform similarly to the 780 for less and the 290x will perform better than it for less as well. You should be getting a higher quality motherboard at this budget and the PSU isn't enough if you want to SLI in the future. Also, why do you need Windows 7? All programs that work on it work on Windows 8, and it's much better.

Go with what ever OS you think is the best for me
