Solution: Change the max farmerate limit ingame to any number other than unlimited or vsync.
For some reason every time I tab out of the game, it takes up more and
more ram over about 2-5 minutes. It goes to the point where it uses up
as much ram as possible until the whole system freezes and I have to
restart it.
The only mods installed are Forge version 2318 and Optifine version HD_U_M5 for 1.8.9

Use something to pre-allocate your ram. I don't know if there is any mod or option for that in forge. I don't use forge unless i play with mods. I use Fabric with Sodium for vanilla. Also, i suggest you to allocate 4 gb ram.
you allocate 1 gig when you got 32gigs?
Why allocate more than needed?
Dont allocate anything less than 2gb of RAM. Minecraft expects an allocation of 2gb or more when you play, not 1gb. This might be the reason why minecraft is dying for you

this makes no sense at all considering its using more than it should be capable of. And if you look at the screenshot its not a memory limitation.
Tbf the default JVM arguments for the game has a minimum allocation of 2gb of ram in the 1st place.
Also I dont think it would be memory limitation as the game would just suffer from latency lag (or is it fps lag).

I tested it with 4GB allocted and the only difference is the speed at which the memory fills up.

This is most likely an issue with a forge or a mod. Have you tried tabbing out in normal minecraft? If it doesnt destroy your pc, tab out with just forge by itself, and then slowly add mods in
well the only forge mod installed is optifine and others clearly dont have such an issue
