Texture pack error
Trying to use a 1.8 pack on 1.12 and the textures look like this, why? and how do you fix it?

maybe CAUSE YOU ARE USING A 1.8 PACK ON 1.12
Well... It's really likely that author put default model assets from 1.8 in their resourcepack even if he didn't modify them at all - that's common mistake when creating resourcepack. Never put assets that you're not gonna modify in your resourcepack.
From the screenshot I see, that there's not custom models so you can simply remove blockstates and models folders
Please remember that filenames of folders and files will have to be changed to 1.12 filenames for the textures to show up.
You can compare the filenames in the resourcepack with the ones in 1.12.jar located in .minecraft/versions/1.12 folder.

Those error images appear because the texture pack you are using is outdated. You would need to find a 1.12 version of the texture pack for the error images to go away. Most likely new blocks and items were added or existing blocks and items were changed aesthetically this would cause problems for the 1.8 texture pack because those changes from 1.12 do not exist in 1.8

But I can use other 1.8 packs with no issues
There have been several changes, both to the names of the texture files and to their location in a texture pack. You would also find that any items or blocks added to Minecraft after 1.8 would default to the minecraft vanilla textures. This is due to the pack not knowing anything about the newer textures. You can sometimes get lucky and go up a version or two, but still with the problem of the missig items and blocks, any more than that, and the problems get worse.
Take for example, a single chest. Below - left is the MC 1.14.x version and on the right is the 1.15.x version. At a glace, they look identical (well they would if they were from the same texture design pack), but a closer look reveals that what you would normally see as the inside of the chest lid has been put on the reverse side for 1.15.x. WHY ??
Now, take this change and multiply it by all the other changes that have happened and you'll perhaps understand more why a single texture pack will not be able to run all versions of minecraft. It's down to the person or persons creating the pack to continue to update them for each new version. Something many people are encouraged to do if they feel they can contribute.

It's all normal in 1.8 btw
