build in odd numbers, make things symmetrical (same length on either side from mid point) and use variation and definition with different block types and accessories such as fences, trap doors and pistons

Well, mine would be use my http://www.planetminecraft.com/texture_pack/linecraft-406211/ It helps because it easier to count blocks and line them up... Now that I am done with advertising.. Don't Dig Down, 'Nuff Said

Apart from the first tip, the second one is great!
