8GB in a dual channel configuration would have 2 individual 4 GB "pieces" of ram. As opposed to a single 8 GB dimm. Dual channel would run a little faster. Also, im not sure where shads coming from on the upgrading unless hes looking at a board with only 2 slots, which would surprise me.
Using 2x4 GB of RAM on a 4-slot motherboard restricts the maximum memory to 24 GB, which can be a pain depending on what you plan to do. Since the OP wants a good computer for homeschool and college, CAD, video editing, and 3D rendering *may* be down the road.
That is a very real limitation. However, I think the odds of the op ever to need more than 24Gb of ram are very low. If indeed she does those things, then i think the i3 would be a bigger hindrance than the ram.

That build is *alright*, but there are a lot of places to improve, and you can get a lot better parts for your budget. Let me see what I can do.
