Such a nice little ship! In my opinion, the ceiling is too low and makes it feel cramped, i'd recommend 3 blocks and 4 blocks for the higher decks, as it makes sense in Minecraft's Scale. (about 1:1,25 or so)

2,5 Meters standard height x 1,25 = 3.125 Blocks, so about 3 blocks to look realistic or 4 blocks for decks with a higher ceiling (often the main deck)

I also recommend two thick ceilings in this scale so you can have a nice ceiling and nice floor.
