To do sheep art you will need the single player commands mod, so you can freeze the coloured sheep and put them in mid-air along a giant wall of any block exept for chests furnaces and dispencers and blocks that take you to an inventory when you right-click it. you will also need a LOT of coloured dyes to paint the sheep.
