First, this pack is a custom model using Blockbench and requires optifine to work. If you are looking at doing something similar with a custom model and all that, then check this video out: https://www.youtube.com/watch?v=arj2eim42KI&ab_channel=EwanHowell
Second, if you're looking at JUST doing the base model and want multiple alternate textures you'll need to look into Optifine Alternate Entity Textures/Models for that.
Lastly, for JUST the one texture, look up how to get the vanilla Minecraft texture pack from a .jar file and you can get the source resource pack there.
