How to uninstall?
You can use this command before removing the datapack from your datapacks folder:
/function pk_no_ghast_grief:cmd/uninstall
The uninstall process will:
- Remove potential scores and storage relative to the current data pack.
- Remove common scores and storage relative to all KawaMood data packs, if the uninstall process detects that you don't have any KawaMood data pack installed anymore.

If you want to make it works with summoned fireballs, you can summon a fireball having both the necessary tag and the marker mount that is used to track the landing point:
summon fireball ~ ~ ~ {ExplosionPower:0b,Tags:["pk.no_gh.pacified"],Passengers:[{id:"minecraft:marker",Tags:["pk.no_gh.controller"]}]}
Also this can't break redstone systems in any way. I'm sad that I can't help you more with this, but the reason of your issue is elsewhere. This is not due to this data pack.
