1. Better paintings.
As you may have seen many medieval and modern texture packs have made their paintings to look like actual things, like symbols, wall ornaments, and many other items that are far better and more realistic.
2. Better food
Minecraft is actually pretty decent when it comes to food, but it could still use some serious tweaks. Like adding in obvious foods that could be easily made with the things we have such as fried eggs.
It also needs to make pumpkin pie an actual block like cake.
