Despite their advertised 'unique feel', the Trial Chambers' colour scheem actually leaves me nostalgic; Is it just me? What recent features added to the game did this to you or felt like they were there all along? Feel free to reply to this post. =]
I rather reach the question from the technical perspective. The trial chambers looks useless. Minecraft is pretty much off road now first the textures now the features not even the silly non realistic stuff is interesting at all. Muh sniffers. Bring back secret friday updates! :D
I'm having a hard time retexturing the hoglins; as they are, they're pretty boring (just large hostile pigs and their color isn't very minecrafty). Ideas on how the texture could be more nether-esk and Unique?
Unfortunately they are just pigs. Maybe you could make the colour more like the greenish-yellow like the back of glowstone? Or you could go to the wiki and Legends has a purple variant for 'outside bastions' which might fit in better for you if you adapt the colours.
Also if you go to the wiki there's screenshots of when the hoglin accidentally had enderman eyes and that adds a bit of character, so maybe if you made the eyes orange or something (like shroomlights) that would add some character.
Some basic ideas. I haven't done the hoglin yet and some back-and-forth would also let me figure out what I want to do with the hoglin so I'm down to do that. I gave some colour ideas, but you said the original isn't Minecrafty and I'd like to know what about it makes it not Minecrafty and what would make something more minecrafty so I can help point you in those directions. =]
