Well, I'm glad there's a topic like this because, to be honest, I've had a few ideas lately that I've wanted to share but there's been no place for it really (unless I made my own topic). So here they are:
I'd really like there to be goblins in Minecraft that set up camps and attack the player. I think that they should drop any item in the game when killed and also they don't look all the same and they vary in sizes.
Personally, I don't really think the villagers in minecraft are at all that great except the fact that you can trade with them - infact, I think they should atleast be able to hold something. I would like them to be able to actually trade with each other in the village so that the player can experience some sort of intelligence in the villagers. I'm not very expectant at this one, but maybe the villagers could actually go and mine. Even more, if the player has traded with them and the villager has took a liking to player, the villager could go and give the player what he/she has found while mining. Maybe they could actually build stuff and break stuff but were restricted from destroying blocks that the player has placed.
To add a little bit more on-edge moments in the game, maybe there could be bandits that raided the villages to get food. They could go and attack the villagers and steal from their chests, although, they attacked the player for supplies as well if he/she were nearby.
Maybe some new monsters would be exciting aswell, but I don't quite expect that because of how big the new 1.4 update has been. I think a nether spider would be quite cool, but didn't have the same sounds as the normal ones because that would ruin the feeling of the nether. Leading on from that, maybe there could be a Wither Skelenton Nether Spider Jockey but I think it should be spawned very rarely like the Spider Jockeys. Yes, yes, I know it's a long name but I'm sure that Jeb would figure out a new one like a Nether Jockey or a Skellspider or something... Also, I think that there should be some new animals aswell, but I'll leave you to dwell on the thought of that, since there are many possibilities that your imaginination will come up to!
