I built a small parkour map, going from a desert biome up the side of a mountain and over a few valleys.  There are a few redstone devices along the way to add some challenge.  Survival mode is recommended due to these, but creative may be necessary to get back up on the course if you fall.  Don't use creative if you are doing a multiplayer map with PvP.  I have provided several sets of Feather Falling boots and a few Knockback I enchanted sticks.  The lapis blocks along the course are where I would suggest resetting your spawn point, in case you fall.  When you get to the end, flick the lever to win the map.
