I just dont know why I dont love my skins I only make OC's and I dont put much time into them :/ and lately I've been feeling down so I'm like, "this skin isn't good enough, I could've done better."

Mayne spend more time into them and you will get a better outcome, Maybe you could even compliment it. Just on one thing will be fine at first but when you spend more time and effort into your skins then I suspect you loving your skins.
