There are quests you can do, and dungeons to explore, and loot, there is an underground Blackreach Style Dwemer(Dwarven) City, a Bosmer/Khajiit City in a huge epic tree, and Alinor, a Summerset Isles Altmer themed city. You can be a bandit, or live among the civilized nations, such as Thoringrad the Vast Underground Metropolis, or River Root, the Huge Tree city. There are mushroom forests for you to explore in Thoringrad, along with lava Oceans, and there are huge tree and endless greenery for you to discover in RiverRoot. I would also recommend checking out and working with the Beyond Skyrim [Atmora] project (AKA Expedition to Atmora), which has appreciated and interacted with some of the [lore] material from this server.
