There are the useless things, and there are the useful things. Here are somethings that should be in your inventory at ALL TIMES!!! (Just in case...)
1) A Sword! - I don't care even if you play on peaceful, carry at least a stone sword just in case you happen to find some meat!
2) Bones and Fish! - If you're looking for a pet, carry about 10 of each at all times. Fish only if your in the jungle though, because that's where ocelots spawn :) Get a companion!
3) Water Bucket - Need to climb a steep mountain? Here ya go! Get set on fire? No problem!
4) Bed - Sleep through the night peacefully! Unless you're a night person :S
5) DIRT - Hey, it may look useless but you can try to say that when your trying to go across a ravine. (You need some kind of block, it doesn't HAVE to be dirt, but dirt is quit common now isn't it?)
6) Iron Pickaxe - You never know when you might find a handy ore you need.
7) Gold - You can eat it, smelt it again to make it gold, and eat it again! Also repels squids, and attracts a certain YouTuber. (Just kidding, but you should carry some coal for torches.)
8) Crafting Table - What are you gonna do with your new resources? Throw 'em away?!
9) Wood - Now you don't need to go cut some trees down!
10) Chestplate - Leather or not, armor is armor.

No, really I have: Sword, armor pickaxe, axe, shovel, bow, arrows, torches, water bucket and meat, and stack of cobblestone. For mines I also get Crafting and lava bucket.Hotbar (from left to right)- sword, food of any type, bow, stack of torches, shears, bucket of water, axe, shovel, pickaxe, stack of any block
Inside inventory- Crafting table, furnace, a minimum of 35 arrows, and a full set of armor
I've found that carrying around this specific item set can take care of nearly any situation you run into. As to the full set of armor, even if you play on peaceful, armor still reduces fall damage, and the stronger the armor, the more it is reduced.
