I am thinking on making a new map, and one of the things I want to look into is have myself appear in the map to give the tutorial. Is there any way I can overlay my player model onto an entity (like a zombie or something) so I can have it look like me, and move it around? I know of adding a player head and armor but I want to put my actual skin over it. I can also use resource packs if that's possible.

If you're ok with making skin textures for each npc/player skin used, you can summon an armorstand holding the item that is the texture, which is also slightly bigger than the zombie itself.

For model help (Im not that good with models, so I cant help you for most questions): https://www.youtube.com/watch?v=aaJ8XgMAOno&ab_channel=TimberForge
The video will also tell you how to import it into the game as an item texture/model.

The main difference with your scenario and the video is your model will have a player skin template, and all you need to do is make the template model slightly larger and reskin it, as iirc the zombie's skins has the same dimensions as a player
