So, I'll join a server and I'll automatically be put in the ESC menu. I hit return to game, then I'm still in the screen. I'll disconnect, and such. I've restarted, refreshed, messed around in the options. Nothing fixes it.

Have you tried minimising the game then maximising it again? I used to have the same issue until I figured that out.
