I would like to make a custom model for a mod, I am planning

How would I go about creating a custom race, if I can say that. Like create a cat race, where their tail moves; and ears move when couching. Along with their textures of course?

Would this involve me making a player api render, to go with my mod

Is there any tutorials I have missed, please could anyone send me anything to help me out with this
