I was wondering if there is any way / mod to see all commands that you execute on servers when you e.g click the server compass.

No... There is no way until and unless you want to use command blox for making the mechanic

I do not know of any mod to do that.
With essentials it executes /jump. if that is any help.
If you mean like one of those server compasses where you get a menu, That is the plugin working. In most cases it doesn't execute a minecraft command. If what you mean by what you said is that you want to see the plugin at work then you can try to look at the plugin code if its public.

Well, I think there is a plugin that you can set up to execute commands using items, that might be what OP is talking about...

Essentials lets you do /pt <command> to do it. However that only works for the player who does it.
If however you want a plugin that allows you to set it up so certain items can be used to execute certain commands, I recommend the More Items plugin.

It also allows you to do cool stuff like creating magic weapons. so thats an added bonus :P
