I use Gimp 2.6. It's sort of like photoshop but it's free. with the colors I use a HUE shift so on the shadows I use more of a purple blue and on the highlights I add some yellow. With color picking I just try to find a mid tone color thats around the same as the reference. It's all just a lot of practice that makes them this good but it all starts with a good technique.
