Most servers use plugins and those plugins require the use of a server mod called Craftbukkit. Craftbukkit does not update at the same time as Minecraft, it usually takes several days to update, so the servers are forced to continue using the previous version of Minecraft. So, if you would like to continue playing on your favorite server don't update to the latest version of Minecraft. If you would still like to enjoy the new features of Minecraft, but you would like to still be able to play on servers you can use a simple mod that allows you to swap between different versions on Minecraft.
