This is a demonstration of how I like to build medieval houses.
You can follow along and build this example, or use my tips to create your own.

Warning!
If building in survival, alot of logs are needed!
I start of with planning the basic shape, usin mostly double pillars and few single ones for variation.
Then I lift the pillars up so they are 4 blocks high and fill in the gaps between with logs.
Also adding logs where I want to be windows.
Then I continue by planning the second floor with the same technique as the first one.
Also adding the places for windows.
Next you can add tower if you want, I mostly have tower on my house but not on every house.
Having tower on every house in the city makes it look weird (in my eyes).
Next I start planning the roofs of the build. Still with logs.
Ok so now the roofs are planned, we finally get off of logs and start filling the roof.
I use sprucewood in my build, but it's your choice what looks cool for you.
If the roof looks too plain, you can pluck in random windows and maybe a chimney.
Ok so now the roofs are all done, now we need to start filling the walls.
I use stonebricks in bottom floor but again it's your choice on your build.
Add some random cracked and mossy ones to make it look cooler.
Same with the second floor, now with white whool as base and gray whool as the variation.
Also fill in the roof ends.
Now you can pluck in the windows.
Take some fences and use them as supports and so on to give it some more details.
Also add buttons if you want.
Start filling in the floors of the house.
The bottom floor can also have randomized tiles.
Pluck in the door, add some terrain and trees, you're done!
