Hi, I set up minecraft on my tablet for my son. He now has his own Amazon fire which also now has minecraft. He wants me to play from my tablet with him however as both minecraft's are in my name/email the same gamertag is on both devices. Ive done a bit of research which says I need to purchase it again to get my own gamertag. In order to do this I presume I need to delete minecraft from my tablet? If I do this will it also delete the account from my sons tablet? Does that make sense?

You should be able to join his worlds with the same gamertag, for getting another gamertag you just need another microsoft/xbox account and log in using that one instead, no need to purchase minecraft again.
Also, deleting minecraft from your tablet shouldn't remove the account from the other one but if possible I suggest signing out of the account instead, you can find the option in settings if your device supports it:
