Where are the entity model files in 1.12.2.jar

i am making some dragons and i want to edit the ender dragon model where can i find the entity models

Unfortunately, the jar files do not contain entity models, only those for blocks and items. And you can't do this with a normal resource pack with vanilla, you have to use optifine for entity models. I am not sure how to do this though, so ask on the optifine discord for help on his subject.
