Use gamerule to stop day-night cycle. Use this /gamerule doDaylightCycle false to stop the sun and this /time set 6000 to set it on 12:00 - this is the brightest period.

I started this project on Dec 17, 2018 and finished it on Jan 17, 2019. Image dimensions are 175x216. This video is 3hrs long with no sound. So I suggest you skip according to your discretion or pack a playlist if you intend to watch.
