What kind of tools are used to create these elaborate mega structures in Minecraft? Is it mostly world edit or mcedit? Or something else?

what i like to do is use either worldpainter or world wachine. world machine gives you super duper cool results. worldedit is what i use to usually manipulate or rotate a huge section i created. lovely for super detailed cathedrals. voxel is good for mountains ect. :) glad to see you still building sshrwood lol

Most highend Minecraft build teams use WorldEdit and VoxelSniper which are both extremely similar.

I know worldpainter is used for a lot of terrain, and it is extremely powerful as I was able to create a terrrain map in one day that with worldedit or voxelsniper would have probably taken me a month. (don't even want to know how long it would take by hand)

for sky scrapers, copy the same pattern as the bottom, but make each 1 or 2 floors smaller and smaller

well a lot of it has to be built by hand but yes worldedit is extremely useful for mega structures.
