Notice: This happened during 1.2.5. Sadly, I don't have any proof for it.
I was just flying in creative and landed on a gravel path near a village.
A zombie appeared out of nowhere and disappeared in a millisecond, I'm confused.

exactly, in 1.2.5 all mobs despawn at all times regardless of in game time.
