play using the morph mod to be an illager
play as a vegan (no milk or leather armour)
play without breaking any IRL laws
start in the nether
play in an ancient city only (just tp to one and dont leave)
play without killing any mobs
play on a superflat

You cannot touch cave air, obviously found in caves, and you can't go to ANY structure in the game, until you beat the ender dragon WITHOUT destroying the crystals OR going to the nether (impossible)

You cannot build a house, or dig out a house. When you defeat the ender dragon, you must spawn a wither in the end too.

spawn the wither, warden and a raid in the end within 60 seconds of each other while fighting the ender dragon for the first time, and take no damage and defeat all in without iron gollems (don't die)

Pacifist dragon killer: fight and win over the ender dragon without killing other mobs than blazes and endermen needed to craft the Ender Eyes. (and the dragon obviously)

Night hunt: play as usual, but never sleep nor hide in a house. Instead, you'd spend your nights hunting monsters.

Idea: Spawn point in the nether and try to get to the overworld

Have you tried origins mod, rlcraft or the oneblock maps? they are a fun challenge that dont change the game much (except rlcraft) and are very fun with friends.

I think that the superflat world challenge is extra cool. Mogswamp on youtube does guide videos on how to get items/what items you cant get in superflat. I may start one myself!

Old school: no offhand effective items, no netherite/elytra, Only attack with swords
Elytrian but no elytra: (The origins mod has this race) no armor above chainmail
Miner: only use picks for combat (no sword/ axes whatever)
Tradesman: villager trades only
Time limit/ end of time: you have a certain amount of time that you can be on the world, Basically speed running the game
survivor: live as long as possible without dying on Hard mode
Ranger: Bow/ crossbow only
The Engineer is Engi-here!: Redstone only

Here are some Ideas for you.

Vegan Run: Play using only fruits and vegetables as food, no meat, milk or eggs.

SuperFlat challenge: Play on the classic superflat world type.

No or leather armor only.

CaveMan Challenge: Stone tools only, unless found. Use only natural caves as bases, maintain the natural look with some decorating.
