so i've made a list of the most game changing minecraft updates starting from low to high in changes:
0.0: sponges!
1.14: pillager/villager/blast furnace/bamboo update!
beta 1.8: villages!
1.13: redo of lots of iconic textures, also sea update + phantoms were added!
1.16: even though it is not released yet i feel it will be giant!
with the new nether updates it will be game changing!
1.9: the craziest update and by far the one that changed minecraft the most! added the new combat update that destroyed fun pvp, but added some really cool new blocks with the end city update, elytra is pretty cool you gotta admit!

Imo 1.9 made PvP more fun. Also, the biggest update is the cave update.
1.14 was the best because it added all the cool new mobs, blocks, and re textured some old ones. The new villages are far prettier than the old, and more lore was added to the history of the villagers with the addition of pillagers. on the other hand, I think alpha was the MOST important of all, because without it, minecraft wouldn't be here.
1.13 Also changed a lot of behind the scenes stuff, such as changing how the world is generated/saved and most of the command system.

1.16 changes a lot of the nether, but 1.9 changed how combat works completely.
I think that the most game changing update of all was 1.14 because it completely changed villagers and added tons of now crafting/smelting blocks.
i think 1.9 was more changing with the combat and end stuff
