Normally I end up just running in circles while jumping :/

Build, start a new game or play on a new server. Try to start all over from scratch again. Indulge in the reasons I like the game (I prefer just doing horses and farming, so I'll work on that). Start a new project, try to do something with redstone, or go off exploring.

If i'm bored with my survival/creative world, then i'll normally hop on hypixel/cubecraft/mineplex/hive and play some mini-games!

Sometimes i'll download a few mods, or find a fun modpack to play on. Other times i'll work on texturepacks and make some cool stuff i've always wanted or combine some of my favorite texturepacks together for personal use. I also like to play vanilla survival every once in a while. I've also recently been trying to speedrun a bit, so that's always fun to attempt. When i'm feeling creative i'll hop on a creative world and make some cool builds. When i feel like i want to pvp i'll go on hypixel and play some games on there. I usually don't get very bored of minecraft since there's always a lot to do, it just depends on what i want to do.

i usually just play some stuff on hypixel or try to build something on creative mode. im not a very creative person myself, so the latter rarely has any good results.

Improve previous builds by adding detail. Or an interior (When building for my villagers, I'm usually happy with just plopping down a bed or two as an interior and improve later).
Explore caves.
Put down the outline for a future build I have in mind.
Go into Creative and do something nuts.
Just do non-Minecraft things for some time.
And maybe my main source of never running out of ideas and interest:
Look at my town, get ideas how its citizens interact and who they are, and base a build on that.
That last one gets me a lot of mileage. Like in a real town, there is always something someone wants and nobody offers yet.
E.g. my newspaper company needs ink and dyes, so I need a flower shop and some kind of transport getting ink from the fishermen's to the newspaper building. So, a flower shop and a drone handling area at the wharf it is!

I start stupid projects. I'm currently working on a wheat farm so big that it'll take hours to fully harvest.

Servers are always fun! If you want a fun survival I know a server that's good! You will be doing survival with other people lol

I've learned to not limit myself in Minecraft to a small space. Always try to leave room for expansion and things to do. I also found that taking my time with stuff and not rushing to get diamonds or certain items right away helps as well.

To be honest... nothing. I try different things for day or two. Read a book or play a different game and immerse myself in another world. That usually helps with the inspiration.
If I want to keep playing minecraft though, I practice techniques or new styles. For example building interesting castle wall designs, try out a sci-fi theme etc.
Or of course, browse planet minecraft.
