If you could change one mobs appearance, what would it be?

I would change the creeper so it has a lot of different colors. But of course theres a mod for that.

Wolf variants. (Huskies, Black fur, Brown fur, etc)

The baby variants on animals could be rethought out.

I would change zombies so that if you were killed by one your body would come back as a zombie with your skin. Maybe with either a green tint or red blood splatters randomly around it.

I would make it so that mooshrooms can spawn with one of two patterns:
The default red mushroom pattern
A new brown mushroom pattern that mooshrooms can spawn with.
Brown mooshrooms drop their brown mushroom counterparts.

I would give the creeper arms so it can climb up all your dirt towers and break down your doors to blow you up.
