Any tips or tutorials to replace vanilla mobs animations with custom made?

Hey! Hi! Hello!!
There must be a thread about this somewhere in here, but I couldn't find!
I know nothing about modding but i started to humor the idea of making a custom animation set for some mobs, mostly the peacefull/neutral ones, but I can't find annywhere on how to add it to the game!
So any pointers to tutorials, threads and tips on how to do it are veeeeery much appreciated!! Thank you so much to take your time here in advance!!
I started experimenting animation in Blockbench, might try to show how it is going even if I'm not capable of adding it to a datapack.

Blockbench, with support of optifine models

I'm pretty new at this, so does it have support by default or should i seek for a plugin?

Prettymuch yeah, only I have been focusing in sheep, cow and horses. I was trying the blockbench animation tool and felt like trying to add in game... even if there is someone else's mod like it XD

I'd say a good start is digging through that mods file structure and seeing how they did it. I can't be sure, I haven't gotten into optifine in years, but I believe it's CIT.
