Why do the farlands start where they do, and is there any easier way to get there? And on the note of getting to them easier is there a way to have a farlands seed? Farlands are similar to amplitude seeds, so I wonder if that's where the idea came from?

What do you mean by 'mystery'?
There are plenty of unanswered questions about what possessed MS/Mj to do 'that thing' 'that way"…
There a various bits in the game that commonly serve as hooks for different fan created 'lore' (most structures likely qualify)…
But, outside of a few trivial examples (most of which most players now seem to look up):
the jungle temple RS puzzle
various recipes (both crafting & things like the wither)
how to do thing X (i.e. get parrots)
I can't think of anything in game I would characterize as a 'mystery'….
