What happens if you uncheck "Publish Live" on a server

If publish live is unchecked the submission will be unlisted therefore not being available for public view and such. You and Site Moderators will be the only ones which are able to see these posts.
If you uncheck Public Live, it will become draft and will not be visible to others
Publish live is basically weather or not you want it to listed or unlisted, In case you are only half way through it or something
If you save that change, I do think it does that.
