I voted Jungle, but if my real pick was on the list, I would vote the Mega Taiga Forest. Those tall 2x2 trees are a good source of wood, and I love how the podzol and cobblestone boulders just give a distinct look from most of the other forest variants.
One of my old survival worlds had a world-spawn set to this biome and I had a lot of fun building stuff there.

Omg I was just about to answer Old Pine Taiga...I will only build there when I start my survival world. I love the podzol and the tall pines especially when they are more like silhouettes at sunset . I always try to find a blossom tree and that's where I will set down to start building. And yes now that the mossy cobble boulders are so big, it really is the most amazing biome
