Ok, found a way to escape. Die of starvation once in the cell, you'll respawn back in the cell, but it'll take a minute for the mining fatigue to hit you, in which time you can break the block right at the bottom left of where you spawned and use that to swim through that gap and break the bed before the wall regenerates, letting you into the last bedtrap. Then just die somehow, (starvation and suffocation are viable options) and you'll respawn outside the prison.

No, it's definitely got elder guardians...
