This is a farm that has water at the top suspended by pistons to control flow. There are 15 total steps with 56 tilled farmland blocks per step for a grand total of 840 farmland blocks. Meaning it will require 840 seeds to completely plant this farm out, and the yield should be between 840 and 1680 wheat.
A redstone switch at the bottom is what you will need to flip in order to make the water both start and stop flowing when the wheat is ready.
This farm is not abnormally huge and can be built with enough dirt and pistons, but is highly functional and shouldn't lag your game to death, for too long at least, when in use. It's hard on minecraft to drop and carry 1700 items at once over water, but as you grab them the game will speed up to normal speed. Just stand at the collection point at the bottom where the switch is.
