*update* changed the item filters to have ovreflow protection, added some jack-o-lanterns by the redstone to reduce lag, and added a trapdoor so no one drowns in the water closet. Thank you ScotsMiser for all your suggestions!

A reasonably compact and quite pretty design, :>:
Nicely done working the sorters, silos, and shops into the build; the shed make harmonious additions to the central tower.
A few of minor points:
Probably a matter of age, but 'water closet' for the item elevator (while nicely descriptive) was a bit jarring as the meaning with which I am familiar is "a flush toilet, or the room containing one"…
Had you tried using a waterlogged trapdoor at the top of the item elevator? (I'm under the impression this would work, but still have limited experience with 1.13.n .)
It might mean extending the sheds another block, but I'm partial to including overflow protection in item sorters…[The lower of the designs shown here ]
You mention limiting the number of sheep to reduce lag. The video doesn't show the redstone torch areas of the sorters, but the lighting updates these cause can be another significant source of lag.
If there is no room otherwise, jack-o-lanterns (to the sides of which may be attached RS-torches, and on which comparators may be placed) could be added to eliminate this source.
Such minor quibbles aside, a nice balancing of function and aesthetics :cheers:
